Gooey Ham & Cheese Muffins Recipe
Where do you get ideas for what you want to cook? I love Pinterest, and also subscribe to several newsletters, a favorite being Closet Cooking. Recently I found a recipe for some very unique muffins on this website, and adapted it to my personal tastes. Gooey Ham & Cheese Muffins aren’t just for breakfast; in fact, they are perfect for lunch with soup or salad. These muffins have a unique texture - sort of a cross between French gougères and light, airy muffins. While the original recipe calls for grated cheese, I wanted pockets of gooey sharp cheddar that oozed when bitten into, so the following recipe calls for extra sharp cheese cut into 1/4” dice.

Gooey Ham & Cheese Muffins are perfect to serve at brunch, and are great with egg casseroles like 3-Cheese Egg Bake.

12 Servings

1 cup cottage cheese
4 eggs
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

1 cup ham, cut into 1/4" dice
1 cup extra sharp cheddar cheese, cut into 1/4" dice
2 green onions, sliced

  1. Preheat oven to 400º.
  2. Spray a 12-cup muffin pan liberally with non-stick spray.
  3. Whisk together (or use a mixer) the cottage cheese, eggs, flour, baking powder, and salt.
  4. Fold in the diced ham, diced cheese, and green onions.
  5. Using a 1/4 cup scoop, scoop the mixture into the prepared baking pan.
  6. Bake 20-25 minutes or until golden.
  7. Remove from the oven, let sit 5 minutes, then run a knife around each muffin and tilt. Serve with or without butter.
